Singapore｜Zheng Yi Hainanese Beef Noodles

Old school Hainanese beef noodles. Soup stock is super strong and makes you wonder how long it's been simmering for. Hard truth, matter of time this traditional taste will be lost so enjoy it while you can.

Operated by an old auntie who is 80 and fit like a fiddle. The kway teow was of a thinner strands and the accompanying sauce was thick and rich. A spoonful of peanut gave it an added dimension. A mixture of beef slices, brisket and stomach. Tender and flavorful. A decent serving. The chili with fermented fish and a squeeze of lime was tangy and spicy. Mixed with the gravy and noodle, it was excellent. The meatballs were probably factory made which was of average quality. The soup was the highlight, which was bold and bovine-rich. Very satisfying.

Simple but extremely flavourful. The gravy in the dry beef noodles is really tasty but isn’t salty and all the ingredients like the sliced beef and organs were fresh and soft. The soup also packs a punch. 👍🏻👍🏻👍🏻
